So, hey. Remember me? I’m Jenn. That chick who’s sometimes funny, and sometimes blogs and stuff? Well, I’m back. It’s the new year (almost) and I’m vowing in the new year to keep this up a bit better. Yeah, yeah, resolutions schmesolutions. I hear ya. But I need to stay on it, doggone it.
Anyway, I was thinking the other day about cookies. Bacon cookies, to be exact. I know you’re all saying, “But Jenn! You don’t even eat meat!” Which is true. I don’t. And, oddly enough, this recipe was introduced to me by a vegan … who used Morningstar strips & soy cheese. Rumor has it that they’re great with real bacon but they’re unbelievably fabulous with fake bacon. So there you go.
Sabine can be a really crappy eater, at times. She’s also a shrimp. Like, off the charts weight wise, pants fit in the length but are too sizes too big in the waist kinda shrimp. It’s a constant battle to get her to eat food items full of healthy fats. Butter & cheese everything. If only all women had this problem, huh?
So, I was pondering these bacon cookies and it hit me – Hey! Sabine likes bacon! And she likes cookies! And these are easily portable and something she could eat on the go in the mornings. BINGO! But … they have a bunch of sugar. And I don’t really want my kid hopped up on sugar at 7am. So what are we going to do about that? We’re going to toy with the recipe, that’s what.
Toying began and several hours later we had a recipe that replaced sugar with honey … which is still sugary and crap but I feel better feeding it to her at 7am than I do feeding her refined sugar. So sue me. And I replaced the egg with tofu. Not because I’m anti egg but because the protein content is higher in the tofu and that makes me happy. This is what we ended up with:
2/3 c. butter
1/2 c. honey
1/4 c. silken tofu
1 tsp. vanilla
3/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. old fashioned oats (Do NOT use quick cook. You will regret it. Nasty. Seriously – don’t even eat that crap.)
1 c. shredded cheddar cheese (I like sharp)
1/2 c. wheat germ
6 crumbled Morningstar “bacon” slices (Or the real thing, I guess, you pig haters, you.)
Beat butter, honey, tofu and vanilla. Add flour, baking soda, salt. Stir in oats, cheese, wheat germ, and bacon. Drop by tablespoon onto greased sheets. Bake at 350 degrees for 10 to 14 minutes. Let cool before removing from sheet. (Duh)
Sabine loves them. I love them. Brandon won’t go near them, but he’s anti-bacon in sweets, so whatever, weirdo. You should try them too. It’s bacon. In a cookie. Who wouldn’t want that!?
